Ingredients
1 ½ pounds carrots
3 tablespoons unsalted butter
2 tablespoons honey
3 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
2. Wash and trim the carrots, leaving them whole. Scrub well if not peeling.
3. In a saucepan, melt butter over medium heat. Stir in honey and minced garlic. Cook for 1–2 minutes until fragrant.
4. Place the carrots on the baking sheet and pour the honey garlic butter mixture over them. Toss to coat evenly.
5. Spread the carrots in a single layer. Season with salt and pepper.
6. Roast in the oven for 25–30 minutes, flipping once halfway through, until caramelized and fork-tender.
7. Transfer to a serving platter. Drizzle with leftover glaze and garnish with parsley.
Notes
Use carrots of similar size for even roasting.
You can prepare the glaze a day ahead and reheat before use.
If using baby carrots, reduce roasting time by 5–7 minutes.
