1 pound Italian sausage

1 medium yellow onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 can (28 ounces) crushed tomatoes

4 cups chicken broth

8 ounces pasta (broken lasagna noodles or tortellini)

1 teaspoon salt

½ teaspoon black pepper

1 cup ricotta cheese (for topping)

½ cup grated parmesan cheese (for topping)

2 tablespoons chopped fresh basil or parsley (for garnish)


Instructions

1. Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it up as it browns.

2. Once partially cooked, add the chopped onion and sauté until softened and sausage is fully browned.

3. Stir in minced garlic and tomato paste; cook for about 1 minute until fragrant.

4. Add crushed tomatoes and chicken broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil.

5. Add pasta and reduce heat to a simmer. Cook until pasta is tender (10 minutes or per package).

6. Taste the broth and adjust seasoning as needed.

7. Serve in bowls with a dollop of ricotta, sprinkle of parmesan, and fresh basil or parsley.


Notes

For best results, cook the pasta separately if you plan to store leftovers—this prevents sogginess.

You can substitute ground beef or turkey for the Italian sausage with great results.
