1/2 cup granulated monk fruit or erythritol

1/2 cup almond flour

1/3 cup sugar-free chocolate chips (plus extra for topping)


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper or lightly grease it.

2. In a mixing bowl, combine cottage cheese, eggs, and vanilla. Whisk until smooth (blend cottage cheese first if a smoother texture is preferred).

Notes

For a smoother batter, blend the cottage cheese before mixing to eliminate curds.
