1 lb ground beef
4 medium potatoes, thinly sliced
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
1 can (10.5 oz) cream of mushroom soup
1 1/2 cups shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp paprika
2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet, brown ground beef with salt, pepper, garlic powder, and paprika. Drain fat.
- Sauté onion, carrots, and celery in the same skillet until slightly softened.
- Layer sliced potatoes, beef, vegetables, and soup in the baking dish. Repeat until all are used, ending with potatoes.
- Top with shredded cheddar cheese. Cover with foil.
- Bake covered for 45 minutes, then uncover and bake for 15-20 minutes more until golden and bubbly.
- Let rest for 5-10 minutes, garnish with fresh parsley, and serve.
