Description

These High Protein Breakfast Burritos are loaded with ground beef, scrambled eggs, black beans, sautéed peppers, and melted cheese, all wrapped in a soft tortilla. They’re easy to make, freezer-friendly, and perfect for busy mornings or post-workout meals.


Ingredients

1 lb ground beef or turkey

6 large eggs

1 cup black beans, drained and rinsed

1 cup diced bell peppers

1/2 cup diced onions

1 cup shredded cheddar cheese

4 large whole wheat or low-carb tortillas

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil or butter


Instructions

  1. In a skillet, cook ground beef or turkey over medium heat until browned. Drain fat and season with cumin, chili powder, salt, and pepper.
  2. Whisk eggs in a bowl, season with salt and pepper, and scramble in a separate pan with olive oil or butter.
  3. Sauté onions and bell peppers in the meat skillet until softened.
  4. Lay out tortillas and layer eggs, meat, black beans, sautéed veggies, and cheese. Roll tightly, folding in the sides.
  5. (Optional) Sear burritos in a skillet until golden and crisp on both sides.
