Description

Ingredients

1 tablespoon olive oil

14 ounces smoked sausage, sliced

1 cup chopped onion

1 cup chopped bell pepper (red or green)

3 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon Cajun seasoning (adjust to taste)

1 can (15 ounces) black beans, drained and rinsed

1 cup long-grain white rice, uncooked

2 cups chicken broth

2 tablespoons chopped green onions (for garnish)

1 tablespoon chopped fresh parsley (for garnish)


Instructions

1. Slice the smoked sausage into thick coins. Heat olive oil in a large skillet over medium heat, then add the sausage. Sear until golden brown and slightly crisp. Remove from the pan and set aside.

2. In the same skillet, add chopped onion and bell pepper. Sauté for 3-4 minutes until soft and translucent. Add minced garlic and cook for 1 more minute.

3. Stir in tomato paste and Cajun seasoning. Let it cook for 1-2 minutes to deepen the flavor.

4. Return the sausage to the skillet. Add the black beans and stir. Pour in the chicken broth and scrape any browned bits off the bottom.

5. Add the uncooked rice. Stir to combine everything. Bring to a boil, reduce heat, cover, and simmer for 18-20 minutes until rice is cooked and liquid is absorbed.

6. Remove from heat, uncover, and fluff with a fork. Garnish with chopped green onions and parsley before serving.


Notes

Use long-grain rice to avoid mushiness; short-grain may overcook and clump.

For a vegetarian version, use plant-based sausage and vegetable broth.

To boost the heat, opt for andouille sausage or add cayenne to the Cajun seasoning.
