This Hearty Beef & Mushroom Stew is a comforting, flavor-packed dish filled with tender chunks of beef, earthy mushrooms, and rich vegetables simmered in a savory broth. Perfect for cold nights, family dinners, or make-ahead meals, this stew delivers a deeply satisfying bite every time.
Ingredients
2 pounds beef chuck roast or stew meat
1 tablespoon olive oil or butter
1 yellow onion, chopped
2 carrots, sliced
2 celery stalks, diced
3 garlic cloves, minced
2 tablespoons tomato paste
4 cups beef broth
1 cup red wine (optional)
8 ounces cremini or baby bella mushrooms, halved
1 tablespoon Worcestershire sauce
3 sprigs fresh thyme
1 sprig fresh rosemary
2 tablespoons all-purpose flour (optional for thickening)
Salt and pepper, to taste
Instructions
1. Pat the beef dry with paper towels and season generously with salt and pepper.
2. In a large Dutch oven or pot, heat olive oil or butter over medium-high heat. Sear the beef in batches until browned. Remove and set aside.
3. In the same pot, sauté chopped onion, carrots, and celery for about 5 minutes.
4. Stir in garlic and tomato paste; cook for 1 more minute.
5. Deglaze the pot with red wine, scraping up any brown bits.
6. Pour in beef broth, Worcestershire sauce, and return beef to the pot. Add thyme and rosemary.
7. Bring to a boil, then reduce to a simmer. Cover and cook for 1.5 to 2 hours.
8. Add mushrooms in the last 30 minutes of cooking.
9. Optional: Thicken with flour slurry (mix flour with cold water) and simmer uncovered for 15 minutes.
10. Adjust seasoning to taste and remove herb stems before serving.
Notes
For best texture, add mushrooms in the last 30 minutes only.
Chuck roast delivers the richest flavor and tender results.
Use a flour slurry or mash some cooked veggies into the broth to thicken without adding gluten.
