Ingredients

Sausage (chicken, turkey, or smoked pork)

Zucchini

Bell Peppers (red, yellow, and orange)

Red Onion

Olive Oil

Garlic

Fresh Herbs (like parsley or oregano)

Salt & Pepper


Instructions

  1. Sear the Sausage: Slice sausage into thick rounds. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add sausage and cook 2–3 minutes per side until browned. Remove and set aside.
  2. Sauté the Vegetables: In the same skillet, add a drizzle more olive oil if needed. Add red onion and bell peppers, cooking for 4–5 minutes. Stir in zucchini and garlic; cook until just tender and slightly charred.
  3. Combine & Finish: Return sausage to the skillet. Season with salt, pepper, and fresh herbs. Stir well and cook another 2–3 minutes. Serve warm.
