- 2 to 3 ripe bananas
- 2 eggs
- 1/3 cup honey or maple syrup
- 1/2 cup Greek yogurt or applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a large bowl, mash the bananas.
- Add eggs, honey/maple syrup, yogurt/applesauce, and vanilla. Whisk until combined.
- Stir in oats, cinnamon, baking powder, baking soda, and salt. Mix just until incorporated.
- Divide batter evenly into muffin cups. Optional: sprinkle tops with extra oats.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool in tin for 5 minutes, then transfer to wire rack to cool completely.
