Description

A sweet and savory escape to the islands in every bite, this Hawaiian Pineapple Chicken & Rice features juicy chicken glazed in a tangy sauce with pineapples and bell peppers. Served over fluffy white rice, it’s a fast and flavorful dinner the whole family will love.


Ingredients

1 lb chicken breast, cubed

1 cup pineapple chunks (fresh or drained canned)

1 red bell pepper, chopped

2 garlic cloves, minced

1 tsp fresh ginger, minced

1/3 cup soy sauce

2 tbsp brown sugar

1 tbsp rice vinegar

1 tbsp cornstarch

1/4 cup water

2 cups cooked white rice

2 green onions, chopped (optional)

1 tsp sesame seeds (optional)

Cooking oil for sautéing


Instructions

  1. Heat oil in a large skillet over medium-high heat. Sear the chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.
  2. In the same skillet, sauté garlic and ginger until fragrant (30 seconds). Add bell pepper and cook for 2-3 minutes.
  3. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, cornstarch, and water.
  4. Pour the sauce into the skillet and simmer for 2-3 minutes until thickened.
  5. Add chicken and pineapple chunks to the sauce, stir to coat, and cook for another 3-4 minutes.
  6. Serve hot over white rice. Garnish with green onions and sesame seeds if desired.
