1 lb chicken breast, cubed
1 cup pineapple chunks (fresh or drained canned)
1 red bell pepper, chopped
2 garlic cloves, minced
1 tsp fresh ginger, minced
1/3 cup soy sauce
2 tbsp brown sugar
1 tbsp rice vinegar
1 tbsp cornstarch
1/4 cup water
2 cups cooked white rice
2 green onions, chopped (optional)
1 tsp sesame seeds (optional)

Instructions
- Heat oil in a large skillet over medium-high heat. Sear the chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.
- In the same skillet, sauté garlic and ginger until fragrant (30 seconds). Add bell pepper and cook for 2-3 minutes.
- In a bowl, whisk together soy sauce, brown sugar, rice vinegar, cornstarch, and water.
- Pour the sauce into the skillet and simmer for 2-3 minutes until thickened.
- Add chicken and pineapple chunks to the sauce, stir to coat, and cook for another 3-4 minutes.
- Serve hot over white rice. Garnish with green onions and sesame seeds if desired.
