Ingredients

Boneless, skinless chicken breasts or thighs

Pineapple rings (fresh or canned)

BBQ sauce

Soy sauce

Minced garlic

Green onions (for garnish)

Fresh parsley (for garnish)

Olive oil


Instructions

  1. In a bowl, whisk together BBQ sauce, pineapple juice (or crushed pineapple), soy sauce, and minced garlic.
  2. Place chicken in a zip-top bag or dish, pour marinade over, seal, and refrigerate for at least 1 hour or overnight.
  3. Preheat grill or grill pan to medium-high. Oil the grates lightly.
  4. Grill chicken 6-7 minutes per side, or until internal temp reaches 165°F. Grill pineapple rings 2-3 minutes per side.
  5. During final grilling minutes, brush extra BBQ sauce over the chicken.
  6. Let chicken rest for 5 minutes before slicing.
