Ingredients
32 oz frozen shredded hashbrowns, thawed
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese, divided
1/2 cup unsalted butter, melted
1/2 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup crushed cornflakes or Ritz crackers (optional)
2 tablespoons melted butter (for topping, optional)
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. In a large mixing bowl, stir together thawed hashbrowns, cream of chicken soup, sour cream, chopped onion, melted butter, salt, and pepper until well combined.
3. Fold in 1 1/2 cups of cheddar cheese.
4. Spread the mixture evenly into the prepared baking dish.
5. Sprinkle the remaining 1/2 cup of cheese over the top.
6. If using, combine crushed cornflakes or crackers with 2 tablespoons melted butter and sprinkle over the cheese layer.
7. Bake uncovered for 45–50 minutes, until bubbly and golden brown on top.
8. Let it rest for 5–10 minutes before serving.
