These Halloween Eyeball Jello Shots are creepy, sweet, and spiked with fun! Made with fruity red gelatin, vodka, and stuffed lychees for a spooky eyeball effect, they’re perfect for Halloween parties or any fright-night festivity. Easy to prep ahead and guaranteed to impress.
Ingredients
1 box (3 oz) red Jello (cherry or strawberry)
1 cup boiling water
1 cup vodka (or ½ cup vodka + ½ cup cold water)
12 canned lychee fruits
12 blueberries or maraschino cherries
1 packet unflavored gelatin (optional, for firmer texture)
12 plastic shot cups
Instructions
1. Drain the canned lychees and insert a blueberry or cherry into each to form the “eyeball.”
2. Boil 1 cup of water and stir in the red Jello until fully dissolved.
3. (Optional) If using, dissolve unflavored gelatin in 2 tbsp cold water, then stir into the hot Jello.
4. Add 1 cup vodka (or split vodka/water mix) to the gelatin mixture and stir well.
5. Let the mixture cool slightly to avoid cooking the fruit.
6. Place one “eyeball” in each shot cup, then pour the Jello mixture over it.
7. Chill in the fridge for 4 hours or until completely set.
8. Serve cold on a spooky tray or with fake blood drizzle for added effect.
Notes
Let the Jello mixture cool before pouring to avoid melting the lychees or popping the fruit.
If you want to unmold the shots, add unflavored gelatin to create a firmer set.
Store covered in the fridge for up to 4 days, but do not freeze.
