Ingredients
1 cup Guinness Draught
10 tablespoons unsalted butter
¾ cup unsweetened cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
1½ teaspoons baking soda
½ teaspoon salt
2 large eggs
⅔ cup sour cream
2 teaspoons vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
2. In a saucepan, combine Guinness and butter over medium heat. Stir until butter is melted. Whisk in cocoa powder until smooth. Let cool.
3. In a bowl, mix flour, sugar, baking soda, and salt.
4. In a large bowl, beat eggs, sour cream, and vanilla until smooth.
5. Slowly mix in the cooled Guinness mixture. Add dry ingredients and stir until just combined.
6. Fill cupcake liners ⅔ full. Bake 17–20 minutes. Let cool 5 minutes in pan, then transfer to a wire rack.
7. Once fully cool, frost with Irish cream or chocolate buttercream.
Notes
Let the Guinness-cocoa mixture cool before adding it to eggs to prevent curdling.
Don’t overmix the batter; it keeps the cupcakes soft and fluffy.
For a deeper chocolate flavor, sift cocoa powder before mixing.
