This Ground Beef Sweet Potato Power Bowl is a hearty, protein-rich meal that brings together seasoned beef, roasted sweet potatoes, and colorful vegetables all topped with a creamy dollop of Greek yogurt. Great for meal prep or a fast weeknight dinner!
Ingredients
1 lb ground beef
2 medium sweet potatoes, peeled and cubed
1 green bell pepper, chopped
1 cup Greek yogurt
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh cilantro or parsley
Instructions
1. Preheat the oven to 400°F (200°C).
2. Toss sweet potato cubes in olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway through.
3. In a skillet over medium heat, sauté the chopped bell pepper in a little olive oil until charred and tender. Remove and set aside.
4. In the same skillet, cook ground beef over medium-high heat, breaking it up as it cooks. Season with cumin, paprika, garlic powder, salt, and pepper. Cook until browned and crispy.
5. Assemble bowls with sweet potatoes, bell peppers, and beef. Add a scoop of Greek yogurt in the center and top with chopped herbs.
6. Serve immediately or store components separately for meal prep.
Notes
Roast the sweet potatoes until the edges caramelize for extra flavor.
Don’t overcrowd the skillet when cooking the beef—this helps get a nice sear.
Add yogurt and herbs right before serving to keep textures fresh.
