Ingredients
1 pound ground beef
4 cups thinly sliced Yukon Gold or Russet potatoes
1 medium onion, diced
2 cloves garlic, minced
2 cups shredded cheddar cheese
1 can (10.5 ounces) cream of mushroom soup
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley (optional, for garnish)
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. In a skillet over medium heat, cook ground beef until browned. Add onions and garlic; cook until softened. Season with salt and pepper.
3. In a bowl, whisk together the cream of mushroom soup and milk until smooth.
4. Layer half of the sliced potatoes in the prepared dish. Top with half of the beef mixture, then half of the soup mixture.
5. Repeat the layers with the remaining potatoes, beef, and soup.
6. Cover with foil and bake for 60 minutes.
7. Remove foil, sprinkle with shredded cheddar cheese, and bake uncovered for 15–20 minutes, until cheese is bubbly and golden.
8. Let rest for 10 minutes before serving. Garnish with parsley if desired.

Use a mandoline slicer to ensure your potatoes are evenly sliced and cook through properly.
For added flavor, try a layer of sautéed mushrooms or bell peppers with the beef.
Letting the casserole rest before serving helps it set and makes slicing easier.
