Description
A hearty grilled steak bowl featuring juicy char-grilled steak, tender grilled zucchini, and a silky Parmesan-herb cream sauce served over grains. Perfect for a weeknight dinner or a special meal at home.
Ingredients
1 pound ribeye steak (or sirloin/strip)
2 medium zucchini
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
2 cloves garlic minced
1 cup heavy cream
1/2 cup Parmesan cheese grated
2 tablespoons fresh herbs chopped (parsley, thyme, or chives)
2 cups cooked grains (rice, farro, or quinoa)
Instructions
1. Pat steak dry, season with salt, pepper, and minced garlic. Let sit at room temp 20–30 minutes.
2. Slice zucchini lengthwise, brush with olive oil, season, and grill 2–3 minutes per side until tender and charred.
3. Heat grill or skillet over high heat, sear steak 3–4 minutes per side for medium-rare. Rest 5–7 minutes before slicing.
4. In a saucepan, melt butter, sauté garlic until fragrant, stir in cream, Parmesan, and herbs. Simmer until thickened.
5. Assemble bowls with grains, zucchini, sliced steak, and creamy sauce on top. Serve warm.
Notes
Always rest the steak before slicing to keep it juicy.
Use freshly grated Parmesan for the best sauce texture.
If reheating sauce, add a splash of cream to restore smoothness.
