This Greek Cucumber Tomato Feta Salad is a refreshing, Mediterranean-inspired dish that combines juicy cherry tomatoes, crisp cucumbers, and creamy feta with a zesty vinaigrette. It’s perfect for summer picnics, light lunches, or as a vibrant side dish to any meal.
Ingredients
2 cups cherry tomatoes, halved
2 cups cucumber, sliced (English or Persian preferred)
1/3 cup red onion, thinly sliced
3/4 cup feta cheese, crumbled (from a block in brine)
2 tablespoons fresh parsley or dill, chopped
3 tablespoons extra virgin olive oil
1 1/2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
Salt and pepper, to taste
Instructions
1. Wash and slice the cucumbers into half-moons or rounds. Halve the cherry tomatoes and slice the red onion thinly. Add all to a large bowl.
2. Crumble the feta cheese over the vegetables using your hands or a fork.
3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust seasoning.
4. Pour the dressing over the salad and toss gently to combine.
5. Garnish with freshly chopped parsley or dill.
6. Refrigerate for 10–15 minutes before serving to allow the flavors to meld. Serve chilled.
Notes
For the best flavor and texture, use block feta in brine rather than pre-crumbled cheese.
To reduce the sharpness of red onion, soak slices in cold water for 10 minutes before adding to the salad.
Make the salad up to 1 day ahead but keep the dressing separate until serving for maximum freshness.
