Description

These Greek Chicken Meatballs with Tzatziki Sauce are juicy, herb-packed, and perfect for a light yet flavorful dinner. 1 lb ground chicken

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

2 cloves garlic, minced

1 teaspoon lemon zest

2 tablespoons red onion, grated or finely minced

1/3 cup breadcrumbs

1 large egg

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for cooking)

3/4 cup Greek yogurt

1/2 cup cucumber, grated and drained

1 clove garlic, minced

1 tablespoon lemon juice

1 tablespoon dill, chopped

Pinch of salt

1 teaspoon olive oil


Instructions

1. In a mixing bowl, combine ground chicken, parsley, dill, garlic, lemon zest, red onion, breadcrumbs, egg, salt, and pepper. Mix gently until just combined.

2. Shape the mixture into 1 to 1.5-inch meatballs using your hands or a small scoop. Place them on a parchment-lined tray.

3. Heat olive oil in a skillet over medium heat. Add meatballs in batches and cook for 8-10 minutes, turning to brown all sides, until internal temperature reaches 165°F. Alternatively, bake at 400°F for 18-20 minutes.

4. While meatballs cook, prepare tzatziki: squeeze excess water from grated cucumber, then mix it with Greek yogurt, garlic, lemon juice, dill, salt, and olive oil. Chill until serving.

5. Serve warm meatballs with tzatziki sauce, lemon wedges, and fresh cucumbers or pita.


Notes

Use a chicken mix with both breast and thigh meat for the juiciest meatballs.

Squeeze the cucumber well before adding to the sauce to avoid watery tzatziki.

These meatballs freeze well! Cook and cool them completely before storing.
