Description

A handheld taste of the Mediterranean! These Greek Chicken Gyros feature juicy marinated chicken, creamy homemade tzatziki, and fresh vegetables all wrapped in soft pita bread. Easy enough for a weeknight, delicious enough to impress.


Ingredients

1.5 lbs boneless skinless chicken thighs

1 cup plain Greek yogurt (divided)

3 cloves garlic, minced

2 tbsp lemon juice (plus extra for tzatziki)

2 tbsp olive oil

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

1/2 cucumber, grated and drained

1 tbsp chopped fresh dill

46 Greek-style pita breads

1 cup chopped tomatoes

1/2 red onion, thinly sliced

1/4 cup chopped fresh parsley


Instructions

  1. Marinate the Chicken: In a bowl, combine 1/2 cup Greek yogurt, lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper. Coat chicken and refrigerate for 1-12 hours.
  2. Cook Chicken: Heat a skillet over medium-high. Cook chicken 5-6 minutes per side until golden and cooked through. Let rest and slice.
  3. Make Tzatziki: Combine remaining yogurt with grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper. Chill until ready to use.
  4. Warm Pitas: Heat pitas on a dry skillet until warm and flexible.
  5. Assemble Gyros: Place chicken, tomatoes, cucumber, onion, and tzatziki onto each pita. Sprinkle with parsley. Fold and serve.
