Description
These Golden Melty Quesadillas are the ultimate cheesy, crispy, and flavor-packed comfort food. Filled with seasoned beef, sautéed peppers and onions, and two types of melty cheese, they’re perfect for feeding a crowd, quick weeknight dinners, or game day snacking.
Ingredients
1 pound ground beef
1 packet taco seasoning (or 2 tablespoons homemade blend)
1 red bell pepper, diced
1 yellow bell pepper, diced
1 small onion, diced
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
8 large flour tortillas
2 tablespoons butter or oil (for pan-toasting)
Instructions
1. In a skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain any excess grease.
2. Add taco seasoning and a splash of water. Stir and let simmer for 2-3 minutes until thickened.
3. Move beef to one side of the skillet. Add a drizzle of oil and sauté diced onions and peppers until soft and golden, about 5-7 minutes.
4. Lay a tortilla on a flat surface. On one half, layer cheese, then beef and veggie mixture, then more cheese. Fold the tortilla in half.
5. Heat a skillet over medium. Add a bit of butter or oil and toast each quesadilla for 2-3 minutes per side, until golden and melty.
6. Let rest for 1 minute before slicing into wedges. Serve with salsa, sour cream, or guacamole.

Don’t skip the second cheese layer—it helps everything stick together better.
