Ingredients
1.5 lbs chicken breasts or thighs, cut into bite-sized pieces
4 cloves garlic, minced
3 tbsp unsalted butter
1 tbsp olive oil
1 cup heavy cream
1 cup freshly grated parmesan cheese
8 oz linguine pasta
1 tbsp fresh parsley, chopped
1/4 tsp red pepper flakes
Salt, to taste Black pepper, to taste
Instructions
- 1. Cut the chicken into bite-sized chunks and season generously with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken pieces until golden brown, about 6–8 minutes.
- Remove and set aside.
- Reduce heat to medium and add butter to the same pan.
- Stir in minced garlic and cook until fragrant, about 1–2 minutes.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in parmesan cheese and continue mixing until sauce thickens, about 3–5 minutes.
- Meanwhile, cook linguine according to package directions.
- Drain and reserve 1 cup of pasta water.
- Add chicken back into the pan with the sauce.
- Toss in the cooked linguine and combine everything well.
- Add pasta water as needed to adjust sauce thickness.
- Sprinkle with parsley and red pepper flakes.
- Serve immediately and enjoy!
Notes
Use freshly grated parmesan—not pre-shredded—for the smoothest sauce.
Chicken thighs offer more flavor and tenderness than breast if you prefer juicier bites.
If reheating, add a splash of cream or milk to loosen the sauce without drying out the pasta.
