Ingredients
1 sleeve saltine crackers
1 cup cherry tomatoes, halved
3 hard-boiled eggs, chopped
1/2 cup mayonnaise
1/4 cup red onion, finely diced
1/4 cup dill pickles or relish, chopped
1 tablespoon fresh dill, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Hard-boil the eggs. Once cooled, peel and chop them.
2. Halve the cherry tomatoes, dice the red onion, and chop the pickles and fresh dill.
3. Roughly crush the saltine crackers with your hands into bite-sized pieces.
4. In a large mixing bowl, combine mayonnaise, chopped eggs, red onion, pickles, dill, salt, and pepper. Stir to blend evenly.
5. Gently fold in the cherry tomatoes.
6. Just before serving, add the crushed crackers and stir until everything is well coated.
7. Serve immediately for the best crunch.
