Description

These Garlic Parmesan Roasted Carrots are roasted until perfectly tender and caramelized, then topped with crunchy golden Panko, fresh garlic, and nutty Parmesan. An easy, flavorful veggie side dish for any meal or holiday spread.


Ingredients

2 pounds carrots, peeled and trimmed

2 tablespoons olive oil

2 cloves garlic, minced (or 1 teaspoon garlic powder)

1/3 cup grated Parmesan cheese

1/3 cup Panko breadcrumbs

1 teaspoon Italian seasoning or 1 tablespoon chopped fresh herbs

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh chopped parsley (for garnish)


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Peel and trim the carrots. Slice thicker carrots in half lengthwise for even roasting.

3. Place carrots on the baking sheet. Drizzle with olive oil, sprinkle with garlic, Italian seasoning, salt, and pepper. Toss to coat.

4. Roast carrots for 20–25 minutes until tender and beginning to caramelize.

5. Meanwhile, combine Panko breadcrumbs, Parmesan, and a drizzle of olive oil in a small bowl.

6. Remove the carrots from the oven, sprinkle the breadcrumb mixture over the top.

7. Return to the oven for 5–7 more minutes until golden and crispy.

8. Garnish with fresh parsley and serve warm.


Notes

Try to choose carrots that are similar in size so they roast evenly.

To make this gluten-free, use gluten-free Panko and double-check your Parmesan.

Freshly grated Parmesan melts and crisps better than pre-shredded.
