Ingredients
2 large chicken breasts
1 cup freshly grated parmesan cheese
1 cup panko breadcrumbs
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 eggs, beaten
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons olive oil or butter
Instructions
1. Pat chicken breasts dry and slice them horizontally to create thinner cutlets.
2. Prepare three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of panko, parmesan, garlic, and parsley.
3. Coat each chicken cutlet in the flour, then the egg, and then the breadcrumb mixture, pressing to adhere.
4. Heat oil or butter in a large skillet over medium heat.
5. Cook chicken for 4–5 minutes on each side or until golden and fully cooked.
6. Transfer to a plate and let rest before slicing. Garnish with extra parsley if desired.
