Ingredients
1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 tbsp olive oil
2 tbsp unsalted butter, divided
1 tsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
3 cloves garlic, minced
1/3 cup sun-dried tomatoes, chopped
1 cup heavy cream
3/4 cup freshly grated Parmesan cheese
1 bunch broccolini
1 tbsp olive oil (for broccolini)
Salt and pepper to taste
Instructions
1. Heat 1 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat.
2. Season chicken with salt, pepper, and Cajun seasoning. Add to the skillet and cook until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
3. In the same pan, melt remaining 1 tbsp butter. Add minced garlic and cook for 1 minute. Stir in chopped sun-dried tomatoes and cook for another minute.
4. Pour in heavy cream and bring to a simmer. Add Parmesan and a pinch more Cajun seasoning. Simmer for 3–4 minutes until thickened.
5. Return the chicken to the skillet, tossing to coat in sauce. Simmer for 2–3 minutes.
6. Meanwhile, heat 1 tbsp olive oil in another pan. Add broccolini, season with salt and pepper, and cook until charred and tender, about 5 minutes.
7. Serve hot with charred broccolini on the side or over pasta or mashed potatoes.
Notes
For best texture, avoid overcrowding the chicken in the pan—cook in batches if needed.
Use freshly grated Parmesan to ensure a smooth, creamy Alfredo sauce.
Add a splash of cream when reheating to bring back the sauce’s velvety consistency.
