Description

Golden-seared Garlic-Parmesan Chicken Bites are tossed in a creamy Cajun Alfredo sauce enriched with sun-dried tomatoes and served alongside smoky charred broccolini. It’s a skillet dinner packed with flavor, crunch, and creamy heat—perfect for a cozy night or a standout meal prep.


Ingredients

1 ½ lbs chicken breast or thighs, cubed

3 cloves garlic, minced

½ cup grated parmesan cheese

2 tablespoons olive oil or butter

1 teaspoon Italian seasoning

½ teaspoon smoked paprika

Salt and pepper, to taste

2 cloves garlic, minced

1 ¼ cups heavy cream

½ cup grated parmesan cheese

1 tablespoon Cajun seasoning (adjust to taste)

¼ cup sun-dried tomatoes, chopped

1 bunch fresh broccolini

1 tablespoon olive oil

½ teaspoon garlic powder

Sea salt, to taste


Instructions

1. Heat olive oil or butter in a large skillet over medium-high heat. Season cubed chicken with salt, pepper, Italian seasoning, and smoked paprika.

2. Sear the chicken for 6–8 minutes, stirring occasionally, until golden and cooked through. In the last minute, sprinkle parmesan over the chicken and let it crisp. Transfer to a plate.

3. In the same skillet, add a bit more oil and toss in the broccolini. Let it cook undisturbed for 2–3 minutes for a good char. Sprinkle garlic powder and sea salt. Cook for another 2 minutes until just tender. Remove and set aside.

4. Reduce heat to medium. Melt butter in the pan, then sauté minced garlic for 30 seconds. Stir in cream, Cajun seasoning, and chopped sun-dried tomatoes. Simmer 3–5 minutes until thickened slightly.

5. Add parmesan cheese and stir until smooth and fully melted.

6. Return chicken bites to the pan and toss in the sauce. Serve hot with charred broccolini on the side or over pasta or rice.


Notes

Make sure the skillet is hot before adding chicken to get a beautiful golden crust.

Let the sauce simmer gently—don’t boil it—to avoid curdling the cream.

Add more Cajun seasoning if you prefer a spicier kick, or stir in chili flakes.
