A one-pan wonder featuring crispy, golden chicken thighs and perfectly roasted baby potatoes, all smothered in garlicky butter and melted Parmesan. This cozy and flavorful dish is perfect for weeknight dinners or casual entertaining.
Ingredients
Chicken thighs (bone-in, skin-on preferred)
Baby potatoes, quartered
Fresh garlic, minced
Parmesan cheese, shredded
Olive oil
Italian seasoning
Salt & pepper
Fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Quarter baby potatoes, mince garlic, and chop parsley.
- Pat chicken dry and season with salt, pepper, and Italian seasoning.
- Heat olive oil in an oven-safe skillet. Sear chicken thighs skin-side down for 5–6 minutes. Flip and cook another 3–4 minutes. Remove and set aside.
- Add potatoes and garlic to the pan with extra olive oil. Stir to coat and let slightly brown.
- Return chicken to pan over potatoes. Bake for 30–35 minutes until chicken is cooked and potatoes are tender.
- In the last 5 minutes, sprinkle Parmesan over chicken. Broil for 1–2 minutes for a golden top.
- Rest for a few minutes. Garnish with parsley and serve warm.
