Ingredients
1 tablespoon olive oil
2 tablespoons butter
1 small shallot, finely diced
4 cloves garlic, minced
1/4 teaspoon red pepper flakes
2 cans butter beans, 15 ounces each, drained and rinsed
1/2 cup vegetable broth
1/3 cup heavy cream
1/3 cup grated Parmesan cheese
2 cups fresh spinach
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices sourdough or rustic bread
1 tablespoon chopped fresh basil, for garnish
Extra Parmesan, for garnish
Instructions
1. Toast the sourdough or rustic bread until golden and crisp, then set aside.
2. Heat the olive oil and butter in a large skillet over medium heat.
3. Add the diced shallot and cook for 2 to 3 minutes until softened.
4. Stir in the minced garlic and red pepper flakes, then cook for 30 seconds until fragrant.
5. Add the drained butter beans and vegetable broth, stirring gently to combine.
6. Simmer for 4 to 5 minutes so the beans absorb the flavor.
7. Lower the heat and stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
8. Add the spinach and cook just until wilted.
9. Stir in the lemon juice, salt, and black pepper.
10. Spoon the creamy butter beans over the toasted bread.
11. Garnish with chopped basil and extra Parmesan, then serve warm.
Notes
Do not boil the beans too hard or they may break apart. A gentle simmer keeps them creamy and whole.
Add a splash of extra broth if the sauce thickens too much before serving.
Toast the bread right before serving so it stays crisp under the creamy beans.
