1 lb chicken breast or thighs, cut into chunks
2 medium zucchini, sliced into 1/4-inch rounds
2 tbsp olive oil (plus more for cooking)
3 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 tsp paprika
1 tsp dried Italian herbs
Salt and black pepper to taste
Juice of 1/2 lemon (optional)
Instructions
- In a bowl, mix chicken with 2 tbsp olive oil, garlic, parsley, paprika, Italian herbs, salt, and pepper. Let marinate for at least 15 minutes.
- Pat zucchini slices dry with a paper towel.
- Heat a skillet over medium-high heat. Add olive oil and cook the chicken in a single layer for 5–7 minutes until golden and cooked through. Set aside.
- In the same skillet, cook the zucchini with a bit more oil if needed. Sauté for 3–5 minutes per side until golden and tender.
- Return the chicken to the pan to warm through. Squeeze lemon juice over top if using.
- Serve hot and enjoy.
