Ingredients
1 lb chicken breast, thinly sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 cup broccoli florets
1 large carrot, julienned
4 cloves garlic, minced
2 green onions, chopped
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons vegetable oil (for cooking)
3 cups cooked white rice
Instructions
1. Slice the chicken, bell peppers, carrots, and broccoli. Mince garlic and chop green onions.
2. Toss the chicken with 1 tablespoon cornstarch and 1 tablespoon soy sauce.
3. Heat oil in a large skillet or wok over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.
4. In the same skillet, sauté garlic for 30 seconds. Add carrots, bell peppers, and broccoli. Stir-fry 3–4 minutes until crisp-tender.
5. Return chicken to the pan. Add remaining soy sauce, oyster sauce, and sesame oil. Stir well to coat everything evenly.
6. Toss in green onions, stir briefly, and remove from heat.
7. Serve over cooked white rice while hot.
Notes
For a saucier dish, double the soy and oyster sauce mixture.
Slice all ingredients uniformly to ensure even cooking.
To meal prep, keep the stir-fry and rice in separate containers for best texture.
