Ingredients

Scale

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs or breasts, sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 teaspoon cornstarch

For the Stir-Fry Sauce:

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon dark soy sauce (optional)

2 teaspoons brown sugar

1 tablespoon minced garlic

1 teaspoon grated ginger

1/2 teaspoon crushed red pepper flakes (optional)

Other Ingredients:

10 oz lo mein noodles (or spaghetti)

2 tablespoons vegetable oil

1 cup broccoli florets

1/2 cup sliced carrots

1/2 cup sliced bell peppers

1/2 cup bean sprouts (optional)

1/2 cup chopped scallions

1/2 onion, thinly sliced

Sesame seeds and scallions (for garnish, optional)

Instructions

  1. Marinate Chicken:
Mix soy sauce, oyster sauce, sesame oil, and cornstarch. Coat chicken and marinate for 15 minutes.
  2. Prepare Sauce:
In a bowl, combine soy sauce, oyster sauce, hoisin sauce, dark soy sauce, brown sugar, garlic, ginger, and red pepper flakes.
  3. Cook Noodles:
Boil noodles until al dente. Drain and rinse with cold water. Toss with sesame oil.
  4. Stir-Fry Chicken:
Heat 1 tbsp oil in a wok, cook marinated chicken until done, remove and set aside.
  5. Stir-Fry Vegetables:
Add remaining oil. Sauté onion, carrots, peppers, and broccoli for 3–4 minutes. Add sprouts and scallions last.
  6. Combine Ingredients:
Return chicken and noodles to the wok. Add sauce, toss well for 2–3 minutes until heated through and glossy.
  7. Serve:
Garnish with sesame seeds and extra scallions. Serve hot.
