Description

A comforting pasta dish with golden spaghetti tossed in garlic butter, hearty Italian sausage, fresh spinach, and topped with melty mozzarella and parmesan. Perfect for weeknight dinners or cozy gatherings.


Ingredients

12 oz spaghetti

1 lb Italian sausage

4 cups fresh spinach

4 cloves garlic, minced

4 tbsp butter

2 cups marinara or tomato sauce

1 ½ cups shredded mozzarella cheese

½ cup grated parmesan cheese

2 tbsp olive oil

1 tsp Italian herbs

½ tsp crushed red pepper flakes (optional)

Salt and black pepper to taste


Instructions

1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup pasta water, drain, and set aside.

2. Heat olive oil in a skillet over medium-high heat. Add sausage, cook until browned, breaking it apart. Drain excess grease.

3. Lower heat to medium, add butter and garlic. Sauté until fragrant, about 30 seconds. Stir in spinach and cook until wilted.

4. Add marinara sauce, Italian herbs, salt, pepper, and crushed red pepper flakes. Stir to combine.

5. Toss spaghetti into the skillet, coating evenly. Add reserved pasta water as needed to loosen the sauce.

6. Transfer mixture to an oven-safe dish, sprinkle with mozzarella and parmesan, then broil 2–3 minutes until bubbly and golden.

7. Serve hot, garnished with extra parmesan or parsley.


Notes

Use bucatini or linguine for a fun variation in texture.

Reserve pasta water—it helps the sauce cling to the spaghetti.

Broil just until cheese bubbles, watch carefully to avoid burning.
