1 lb large shrimp, peeled and deveined
4 tbsp butter (plus more for mashed potatoes)
3 garlic cloves, minced
4 medium potatoes, peeled and chopped
¼ cup cream or milk (for mashed potatoes)
Salt and pepper, to taste
1 cup green peas (steamed or blanched)
Lemon wedges, for serving
Instructions
- Boil the Potatoes: In a large pot, boil chopped potatoes in salted water until fork-tender (about 15-20 minutes). Drain and mash with butter, cream, salt, and pepper until smooth.
- Cook the Peas: Steam or blanch peas until just tender and bright green. Set aside.
- Sear the Shrimp: In a hot skillet, melt butter and add minced garlic. Stir for 30 seconds, then add shrimp in a single layer. Sear 1–2 minutes per side until pink and slightly crisp.
- Assemble the Bowl: Spoon mashed potatoes into bowls, top with shrimp, drizzle garlic butter, and add peas. Serve with lemon wedges.
