Ingredients
1 pound large shrimp, peeled and deveined
9 lasagna noodles, oven-ready or cooked
4 tablespoons butter
4 cloves garlic, minced
1 ½ cups heavy cream
1 cup ricotta cheese
2 cups shredded mozzarella cheese
½ cup grated parmesan cheese
2 tablespoons chopped parsley
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon lemon zest or 1 tablespoon lemon juice (optional)
Instructions
1. In a skillet, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
2. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Set aside.
3. In the same skillet, add more butter if needed. Add garlic, then stir in cream. Simmer, reduce heat, and stir in parmesan until melted. Add lemon zest or juice if using.
4. In a bowl, mix ricotta with parsley, a pinch of salt and pepper, and a spoonful of garlic cream sauce.
5. In a 9×13 baking dish, spoon some sauce on the bottom. Layer noodles, ricotta mix, shrimp, sauce, and mozzarella. Repeat layers. Top with mozzarella and parmesan.
6. Cover with foil and bake at 375°F for 25 minutes. Uncover and bake an additional 10–15 minutes until golden and bubbly. Let rest 10 minutes before serving.
Notes
Pat shrimp dry before cooking to avoid watery lasagna.
Use fresh garlic and parsley for the most vibrant flavor.
