Ingredients
4 lamb chops
3 tablespoons unsalted butter
4 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
1. Remove lamb chops from the refrigerator and let them come to room temperature for 20–30 minutes.
2. Pat the chops dry and season both sides with salt, pepper, and optional crushed red pepper flakes.
3. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
4. Sear the lamb chops for 3–4 minutes per side, or until a golden crust forms.
5. Lower the heat to medium and add the butter, garlic, and herbs to the skillet.
6. Let the garlic and herbs infuse the butter for 30 seconds while stirring.
7. Spoon the melted garlic butter over the lamb chops for 1–2 minutes to baste.
8. Transfer the lamb chops to a plate and let them rest for 5 minutes before serving.
Notes
Letting the lamb come to room temperature before searing ensures even cooking.
Use fresh herbs if possible for brighter, more aromatic flavor.
Basting with garlic butter while cooking keeps the meat juicy and flavorful.
