2 boneless skinless chicken breasts, diced
8 oz rigatoni pasta
2 tablespoons olive oil
3 tablespoons butter
4 garlic cloves, minced
1 cup heavy cream
3/4 cup grated parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Season and Sear Chicken: Season diced chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through. Remove and set aside.
- Make Garlic Butter Base: Lower heat to medium. Add butter and garlic to the skillet. Sauté until fragrant.
- Create Sauce: Pour in heavy cream and simmer 3–4 minutes. Stir in parmesan until smooth.
- Cook Pasta: Boil rigatoni in salted water until al dente. Drain, saving 1/2 cup pasta water.
- Combine Everything: Return chicken to the skillet. Add pasta and mix to coat. Use reserved water to loosen the sauce if needed.
- Serve: Garnish with parsley and extra parmesan. Serve immediately.
