2 chicken breasts or thighs
12 oz fettuccine or linguine
3 tablespoons butter (divided)
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup grated parmesan cheese
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions
- Season chicken with salt and pepper.
- Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken 6-8 minutes per side until golden and cooked through. Rest, then slice.
- Cook pasta in salted water until al dente; drain, reserving 1/4 cup pasta water.
- In skillet, melt remaining butter. Sauté garlic 1 minute. Add cream, simmer, then stir in parmesan until thickened. Add reserved pasta water if needed.
- Toss pasta with sauce. Top with sliced chicken and garnish with parsley and extra parmesan.
