Ingredients
2 large chicken breasts
8 oz rotini pasta
3 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic minced
1 teaspoon Italian seasoning
1 cup freshly grated Parmesan cheese
2 cups fresh spinach optional
Salt and pepper to taste
1⁄2 cup reserved pasta water
Instructions
1. Slice chicken breasts into even cutlets and season both sides with salt, pepper, and Italian seasoning.
2. Heat olive oil in a skillet over medium-high. Sear the chicken for 5–6 minutes per side until golden and cooked through. Transfer to a plate.
3. Cook rotini pasta in salted water until al dente. Drain and reserve 1⁄2 cup of pasta water.
4. In the same skillet, melt butter over medium heat. Add garlic and cook for 1–2 minutes until fragrant.
5. Add reserved pasta water a bit at a time, whisking to create a smooth garlic butter sauce.
6. Toss in cooked pasta, coating well in the sauce.
7. Slice the chicken and lay it over the pasta. Stir in Parmesan cheese and optional spinach.
8. Let everything warm until cheese melts and spinach wilts.
9. Garnish with extra Parmesan and serve immediately.
Notes
Pat chicken dry before seasoning to help develop a crispier sear.
Don’t skip the reserved pasta water—it helps bind the sauce.
Use freshly grated Parmesan for best melt and flavor.
