1 (30 oz) bag frozen hash brown potatoes, thawed

2 cups sour cream

1 (10.5 oz) can cream of chicken soup

2 cups shredded sharp cheddar cheese

1/2 cup chopped onion (optional)

1/2 tsp garlic powder

Salt and black pepper to taste

1/4 cup melted butter

2 cups crushed cornflakes or buttery crackers

2 tbsp butter, melted (for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine sour cream, cream of chicken soup, cheddar cheese, chopped onion (if using), garlic powder, salt, and pepper.
  3. Fold in the thawed hash browns until evenly coated.
  4. Spread the mixture into the prepared baking dish.
  5. In a small bowl, mix crushed cornflakes or crackers with 2 tbsp melted butter.
