1 (30 oz) bag frozen hash brown potatoes, thawed
2 cups sour cream
1 (10.5 oz) can cream of chicken soup
2 cups shredded sharp cheddar cheese
1/2 cup chopped onion (optional)
1/2 tsp garlic powder
Salt and black pepper to taste
1/4 cup melted butter
2 cups crushed cornflakes or buttery crackers
2 tbsp butter, melted (for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine sour cream, cream of chicken soup, cheddar cheese, chopped onion (if using), garlic powder, salt, and pepper.
- Fold in the thawed hash browns until evenly coated.
- Spread the mixture into the prepared baking dish.
- In a small bowl, mix crushed cornflakes or crackers with 2 tbsp melted butter.
- Sprinkle the topping over the casserole.
- Bake for 45-50 minutes or until the top is golden and bubbling.
- Let cool for 5-10 minutes before serving.
