Topped with crunchy Fritos, this dish is ideal for potlucks, easy dinners, and fun food ideas the whole family will love.

Ingredients

Scale

4 cups shredded green cabbage

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1/2 cup diced red onion

1 cup cherry tomatoes, halved

1/4 cup chopped cilantro

1 cup shredded cheddar cheese

1/2 cup sour cream

1/3 cup mayonnaise

1 packet taco seasoning

2 cups Fritos corn chips

Instructions

1. In a large bowl, add the shredded cabbage, diced red onion, halved tomatoes, and chopped cilantro.

2. Stir in the black beans and corn until everything is evenly combined.

3. In a separate bowl, mix the sour cream, mayonnaise, and taco seasoning until smooth.

4. Pour the dressing over the cabbage mixture and toss well to coat evenly.

5. Fold in the shredded cheese and mix gently.

6. Just before serving, add the Fritos on top or mix them in for a crunchy texture. Serve immediately.

Notes

For best crunch, always add the Fritos right before serving to prevent sogginess.

Swap sour cream with Greek yogurt for a lighter and slightly tangy version.

Add grilled chicken or ground beef to turn this into a more filling main dish.
