This Fresh Cucumber Caprese Salad is a vibrant and refreshing twist on the classic Caprese. Crisp cucumbers, juicy cherry tomatoes, creamy mozzarella balls, and fresh basil are tossed in a tangy balsamic dressing for a light side dish or snack. Ingredients
2 cups sliced cucumbers
1 1/2 cups halved cherry tomatoes
1 cup fresh mozzarella balls (ciliegine)
1/4 cup thinly sliced red onion
1/4 cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/8 teaspoon red pepper flakes (optional)
Instructions
1. Slice cucumbers into thin rounds and halve the cherry tomatoes.
2. Thinly slice red onion and place all in a large mixing bowl.
3. Add mozzarella balls to the bowl with the vegetables.
4. In a separate bowl, whisk olive oil, balsamic vinegar, salt, pepper, and red pepper flakes.
5. Pour dressing over the salad and gently toss until coated.
6. Tear fresh basil leaves and scatter over the top just before serving.
7. Serve chilled or at room temperature. Store leftovers in the fridge up to 2 days.
Notes
For best results, use English or Persian cucumbers to avoid excess seeds and bitter skins.
Add the basil only right before serving to keep it fresh and green.
If making ahead, toss everything except basil and refrigerate—then add basil when serving.
