Description

This French Onion Ground Beef and Rice Casserole blends the comforting flavors of rich ground beef, caramelized onions, creamy sour cream, and gooey cheese over a base of perfectly baked rice. It’s cozy, hearty, and ideal for family dinners or make-ahead meals.


Ingredients

2 tablespoons butter

2 large yellow onions, sliced

1 pound ground beef

3 cloves garlic, minced

1 cup uncooked long grain white rice

1 cup beef broth

1 (10.5-ounce) can French onion soup

1/2 cup sour cream

1 cup shredded mozzarella cheese

1 cup shredded Gruyère cheese

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Melt butter in a large skillet over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, until caramelized, about 20–25 minutes.

2. In another skillet, brown the ground beef. Drain excess fat, then stir in garlic, cooking 1 minute more. Season with salt and pepper.

3. In a large bowl, combine ground beef mixture, caramelized onions, uncooked rice, French onion soup, beef broth, and sour cream. Mix well.

4. Transfer mixture to a greased 9×13-inch baking dish. Cover tightly with foil.

5. Bake at 350°F (175°C) for 50–55 minutes until rice is tender.

6. Remove foil and top with mozzarella and Gruyère cheese. Bake uncovered for another 10 minutes, then broil for 1–2 minutes until golden and bubbly.

7. Serve hot and garnish with fresh herbs if desired.


Notes

For deeper flavor, deglaze the onions with a splash of white wine while caramelizing.
