These French Onion Funeral Potatoes are the ultimate creamy, cheesy comfort food. Layered with sour cream, French onion dip, and caramelized onions, they’re the perfect casserole side dish for holidays, potlucks, and hearty family dinners.
Ingredients
1 (30 oz) bag shredded hash browns (thawed)
1 cup French onion dip
1 ½ cups sour cream
1 can cream of chicken soup
2 cups shredded cheddar cheese
2 large yellow onions (thinly sliced)
3 tablespoons butter
Salt and pepper to taste
Chopped parsley for garnish (optional)
Instructions
1. Slice onions and caramelize in a skillet with butter over medium-low heat for 25–30 minutes until golden and soft. Set aside.
2. In a large bowl, mix cream of chicken soup, sour cream, French onion dip, salt, and pepper.
3. Fold in shredded hash browns and cheddar cheese until fully combined.
4. Transfer the mixture into a greased 9×13-inch baking dish.
5. Top with half of the caramelized onions.
6. Bake uncovered at 350°F (175°C) for 45–50 minutes or until bubbly and golden.
7. Remove from oven, top with remaining onions and parsley. Serve hot.
Notes
Make ahead: Assemble the casserole the night before, but wait to add the second half of onions until just before serving.
If using fresh potatoes, grate and squeeze out excess moisture to avoid sogginess.
Add cooked bacon, diced ham, or rotisserie chicken for a meaty twist.
