Description

Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk or buttermilk

1/3 cup honey

1/4 cup melted butter

1 large egg


Instructions

1. Preheat oven to 400°F (200°C). Grease an 8×8-inch baking dish or line it with parchment paper.

2. In a large bowl, whisk together yellow cornmeal, all-purpose flour, baking powder, and salt.

3. In a separate bowl, whisk together milk (or buttermilk), honey, melted butter, and egg until smooth.

4. Pour wet mixture into dry and fold gently until just combined—do not overmix.

5. Pour batter into prepared baking dish and spread evenly.

6. Bake for 20–25 minutes or until the top is golden and a toothpick inserted in the center comes out clean.

7. Let cool for 10 minutes in the pan before slicing. Serve warm with butter or extra honey.


Notes

For extra moisture and flavor, use buttermilk instead of regular milk.
