Ingredients
8 oz cream cheese, softened
1 cup shredded sharp white cheddar or provolone
1/3 cup green olives, chopped
1/3 cup kalamata olives, chopped
1/4 cup roasted red peppers, chopped
1/4 cup marinated artichokes, chopped
2 tablespoons fresh parsley, chopped
1 teaspoon minced garlic or 1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes (optional)
Fresh rosemary sprigs (for garnish)
Cranberries (for garnish)
Instructions
1. Let the cream cheese sit at room temperature for 30 minutes until softened.
2. Roughly chop olives, roasted red peppers, and artichokes. Drain well.
3. In a bowl, mix cream cheese, shredded cheese, parsley, garlic, and red pepper flakes.
4. Fold in the chopped antipasto ingredients gently until evenly combined.
5. Transfer the mixture onto plastic wrap and shape into a log. Wrap tightly and chill for at least 2 hours or overnight.
6. Before serving, unwrap the log and place on a serving board.
7. Garnish with rosemary sprigs, extra olives, peppers, and cranberries.
8. Serve with crackers, crostini, or fresh vegetable sticks.
Notes
Drain your antipasto ingredients thoroughly to avoid a soggy mixture.
For a firmer texture, chill the log overnight before serving.
You can shape the mixture into a wreath or ball instead of a log for a different presentation.
