Ingredients

1 lb large shrimp (peeled and deveined, tails on)

1 tablespoon olive oil

4 tablespoons unsalted butter

4 cloves garlic (minced)

1/2 cup dry white wine (or chicken broth)

Juice of 1 lemon (about 2 tablespoons)

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

2 tablespoons chopped fresh parsley

8 oz linguine or angel hair pasta

Freshly grated Parmesan cheese (optional)


Instructions

  1. Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of the pasta water, then drain.
  2. In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook 1-2 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, melt butter. Add garlic and sauté for about 1 minute.
  4. Pour in white wine or broth, lemon juice, and red pepper flakes. Simmer for 2-3 minutes to reduce.
  5. Return shrimp to skillet and toss to coat.
  6. Add pasta and gently combine. Use reserved pasta water if needed to loosen the sauce.
  7. Sprinkle with parsley and Parmesan, if desired. Serve hot.
