1 lb large shrimp (peeled and deveined, tails on)
1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic (minced)
1/2 cup dry white wine (or chicken broth)
Juice of 1 lemon (about 2 tablespoons)
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley
8 oz linguine or angel hair pasta
Freshly grated Parmesan cheese (optional)
Instructions
- Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of the pasta water, then drain.
- In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook 1-2 minutes per side. Remove shrimp and set aside.
- In the same skillet, melt butter. Add garlic and sauté for about 1 minute.
- Pour in white wine or broth, lemon juice, and red pepper flakes. Simmer for 2-3 minutes to reduce.
- Return shrimp to skillet and toss to coat.
- Add pasta and gently combine. Use reserved pasta water if needed to loosen the sauce.
- Sprinkle with parsley and Parmesan, if desired. Serve hot.
