1 cup heavy cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
3/4 cup chopped maraschino cherries (plus extra whole ones for topping)

Instructions
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
2. In a large bowl, beat eggs for 5 minutes until thick and pale. Add granulated sugar and vanilla, and beat until the mixture ribbons.
3. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold into egg mixture.
4. Pour batter into the prepared pan and spread evenly. Bake for 10–12 minutes, until the cake springs back when touched.
5. Immediately invert cake onto a clean towel dusted with powdered sugar. Peel off parchment and roll up cake in the towel. Let cool completely.
