Ingredients
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground nutmeg
¼ teaspoon salt
2 large eggs
¾ cup granulated sugar
½ cup unsalted butter, melted
1 cup eggnog
1 teaspoon vanilla extract
¾ cup powdered sugar (for glaze)
2 to 3 tablespoons eggnog (for glaze)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, nutmeg, and salt.
3. In a large bowl, beat eggs and sugar until light and frothy. Add melted butter, vanilla extract, and eggnog. Mix until smooth.
4. Gradually stir dry ingredients into the wet mixture until just combined. Do not overmix.
5. Pour batter into prepared loaf pan and smooth the top.
6. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool in pan for 10 minutes, then transfer to wire rack.
8. Mix powdered sugar with eggnog to form a glaze and drizzle over cooled bread. Allow to set before slicing.
Notes
Do not overmix the batter—mix just until combined to keep the bread light and fluffy.
Let the loaf cool completely before glazing or the icing may melt and run off.
For extra texture and holiday flavor, add ½ cup chopped pecans or dried cranberries to the batter.
