Description

Ingredients

1 box brownie mix

2 eggs (or as required by mix)

1/2 cup vegetable oil (or as required by mix)

1/4 cup water (or as required by mix)

3/4 cup light corn syrup

3/4 cup brown sugar

1/4 cup melted butter

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups chopped pecans

1/2 cup whole pecans (optional, for garnish)


Instructions

1. Preheat your oven according to the brownie mix instructions and grease or line a 9×13-inch baking pan with parchment paper.

2. Prepare the brownie batter using the mix, eggs, oil, and water as directed on the package.

3. Pour the batter into the pan and bake for about 20 minutes until the top is just set but the center remains soft.

4. While the brownies bake, mix the corn syrup, brown sugar, melted butter, eggs, and vanilla extract in a bowl until smooth. Stir in the chopped pecans.

5. Remove the partially baked brownies from the oven and carefully pour the pecan topping over them. Spread evenly and add whole pecans on top if desired.

6. Return the pan to the oven and bake for another 25–30 minutes until the topping is bubbling and mostly set.

7. Let cool completely at room temperature, then chill in the fridge for 1–2 hours for cleaner slicing.


Notes

For the best clean slices, chill the bars before cutting with a sharp knife wiped clean between cuts.

You can make this recipe a day ahead—it actually tastes even better after resting overnight.

If you don’t have corn syrup, substitute with maple syrup or honey, though texture may vary slightly.
